So, something that has been hard for me while going meatless is that I do get a craving for pastrami, salami, corned beef – like, literally all of the worst possible meats. I love a good reuben or layers of pastrami on rye – I really just have a thing for sandwiches. So what does a meatless eater do when hauled to arguably one of the best burger places in the midwest and all you want is some cured meat? You check out the veggie menu and have some photos handy:
Have I addressed my obsession with Scottish cattle 😛 Anyway, I haven’t become familiar with meat replacements and just prefer to eat veggies instead. On the Red Cow menu, they have a Veggie Reuben and the ‘meat’ is slices of beets – this has inspired me to make my sandwiches with more veggies as meat. Here are a few of my fave combos!
Sweet potatoes have quickly become my fave add-in when I want something substantial and filling. I keep a few par-boiled on hand then I like to crisp them up in a little oil when I am ready to eat them. They are also great for tossing in salads, stir fry, soups – they are very versatile. #samwisegamgeeismysoulmate
Beets are also really good as the main event in a sandwich, this combo is my own twist on the Veggie Reuben. I do still eat cheese on occasion but it can be left off as often as not.
I am in somewhat of a love/hate relationship with avocados – I haven’t had a really good one in ages. I am unsure if this is due to poor growing seasons or the explosion of demand but the selection has been rather disappointing. If I am able to find large, ripe ones (and want to spend upwards of 4 bucks) then they do make a great sandwich filler. Also, hummus is one of my fave condiments as of late.
I also enjoy a good grilled-cheese, you don’t need two cheeses but if you are cheating anyway…I saute the eggplant and spinach in a little olive oil before grilling everything together. This one is tasty dipped in marinara or tomato soup.
Those are just a few of my fave combos, the possibilities are limitless though and surprisingly easy!
